I swam with dolphins when we were in mexico, we stayed in cancun and did the trainer for a day at Parque Nizuc, it does have a swim park with all the flumes next to it, but the dolphins are actullaly out at sea. I think it is a lovely idea - esp with the nicer weather coming up and people will be wanting to look all tanned in their summer clothing. We are holding a laides night to raise funds for breast cancer research and we got a function room for free. I guess you have to try and find a venue first...

Difficult one - depends if you friends/family would do fancy dress? Some people might be put off coming along? Personally for something a little different and not in with the norm rent a function room and have a dj - you could try something like a garden party? Get the BBQ on; loads of chilled...
