There's loads of threads about what were all having for dinner & what is your fave cookbook but why not just share our favourite recipes!

I personally love to try new things in the kitchen

So lets share xxx
 
Chicken A La Lyndsey

(for 4 people)

4 x Chicken Breasts
2 pcks of Parma Ham (5 slices in each)
1 bag of grated cheese - ASDA
1 bag ready made chicken gravy - ASDA
1 jar Cayenne Pepper
1 tube Garlic Paste
Ball of string


-Slice the chicken breasts in half
-Mix half the cheese with 2 teaspoons of cayenne pepper & 3 squirts of Garlic
-spoon this mixture into the chicken breasts & close them back over
-Wrap two slices of parma ham round each chicken piece & tie with string to keep in one piece.
-Pour gravy into a large casserole dish / slow cooker add 4 squirts of garlic and the remainder of the cheese mixture
-Add the tied up chicken breasts
-cook on at 150 Degrees for 45mins or if using the slow cooker just a low setting for 5.5hrs
-When ready remove the string from the chicken and serve!


I don't know what makes this all so magical but it is darn good!

I made it while playing around one day & everyone always asks how i did it, The Cayenne pepper packs a great punch. It's my speciality - So good that hubby asks that i make it for his birthday meal every year instead of take away - what a compliment

My fave dish ever!!!

This dish is so quick and easy my husband makes it quite often


Salmon & Asparagus Pasta

Ingredients
Pasta Shells
Smoked Salmon ( off cuts are cheaper )
Asparagus
Mascapone Cheese
Boil pasta as directions on packet. Chop asparagus into bite size pieces and boil in salted water until cooked approx 5 minutes. Chop salmon into small pieces. Drain pasta and rinse with boiling water, put back into pan add salmon, asparagus, mascarpone cheese and a good grating of black pepper. Stir until mascarpone melts and gives a good covering, serve.
 
LYN'S STUFFED BUTTERNUT EASY RECIPE.

Make a savoury mince
Boil butternut whole till tender, (stick fork in to tell)
Slice butternut length ways
Scoop out the pips
Fill with the savoury mince
Sprinkle cheese on top
Brown in oven or grill
Serve with side salad/chips

Quick and easy.
 
This is one of my quick recipes:

Put a layer of sliced eggplants in a pan, a slice of fresh tomatoes on each eggplant, and top that with feta cheese. Drizzle some olive oil, salt (just a little because the cheese has enough salt) and pepper, and put it in the oven for about half an hour at 200 Celsius.

Yummy, fast and easy!
 
Lee & CLaires Low Fat Spaghetti Carbonara!

1 pack un smoked bacon (trim off the fat if your trying to loose weight!)
2 Cloves Garlic
Mushrooms (as many as you like..we dont like measuring can you tell?!)
Tub greek Yog, 0%
Parmesan Cheese (as much as you like!!)
Wholewheat Spaghetti
Salt and Pepper

Dry fry bacon and crushed garlic, add in mushrooms and salt and pepper to season, when all is cooked, drain off any excess liquid from meat etc, toss thru cooked spaghetti, add in a few spoonfulls of greek yog (to the consistency you like) and a bit of parmesan (as much as you like!) and toss and voila!!

Its our favourite tea!!!

Going to sound daft now but hey ho! Is Eggplant the same as Aubergine?
 
Yes they are the same thing, not sure why the different names though!

"Aubergine" is actually a french word that means... Eggplant!
No matter how you call it, though (the greek word is "melitzana"), this dish is delish!
 
As an alternative i have a super fat Carbonara

1 huge tub of double cream
1 tub of pancetta bacon
1 packet of spaghetti
garlic paste
some cheese (i dunno how much x)

Boil pasta in pot
Fry bacon pieces with a few squirts of garlic
Add tub of cream & leave to simmer till pasta is ready
Add a little cheese and stirr through sauce should be nice and thick now

Then add to pasta!

To make it extra special make the sauce the day before and leave it in the fridge I dunno what happens to the cream but it tastes a million times better the next day
