My client wants grey tones on her bleached h/l hair, can I use wella 9/81 10 vol or will this darken it too much. Any advice appreciated

9/81 would need to be applied to a clean level 10 for it to be that colour. Any sign of yellow at all and it will go khaki / muddy

Thank you, I did use it & it took it to white, she was happy. But what should I use to get grey?

You need to either Pretone it first and then apply target shade. Or drop the level of your toner :)
