My 13 year old loves to bake but Im getting sick of fairy and queen cakes:lol:
I have been looking for a variety of muffin recipes and wondered whats your favorite kind and if any of you have some recipes she could try?

This is a recipe for banana loaf cake, but I have put it into muffin cases before for hubbie to take into work and it comes out the same.




4oz butter or margarine
6oz sugar
8oz self raising flour
2 eggs
2 large or 3 medium, very ripe bananas

Heat the oven to gas mark 4; 180C
Grease a 2lb loaf tin.
Mash the bananas with a sturdy fork.
Cream the butter and sugar together and mix in the eggs
Mix together the two yellow sludges you now have.
Mix in the flour.
Scrape into the loaf tin and bake for 40 minutes then lower the temperature to gas mark 2; 150C and cook for a further 30 minutes.
 
I've got a M&S Book called One Recipe - 100 Muffins, it's excellent as is exactly what it says on the cover, one recipe for the muffin base and 100 different ideas to put in them. I think I got it for about a fiver
