Well here's what I have in my freezer at the moment:
Red Pepper:
1 Butternut Squash
2 Red Peppers
1 Red Onion
Vegetable stock
black pepper & chilli to taste.....
Boil it all up until the squash is ...well squashie!! Then whizz it with a blender. I don't add chilli myself as I don't like it.....it has a nice little kick from the peppers.
This is a WW recipe I believe, but it's really nice......I can't remember how much stock, think it might be about a pint, but it really depends how thick you want it.

Potato and Leek:
Equal weight of potatoes and Leeks, vegetable stock.........as above, depends on what thickness you like.

I also make a really nice chicken soup which is basically my chicken casserole whizzed up:
For my chicken casserole I fry off my chicken with some onions/shallots and garlic, then chuck it in a pan with chopped up carrots, swede, courgettes, (and whatever other veg I have lurking) green lentils.....with equal measure of chicken/vegetable stock and pure apple juice.....boil it up until lentils and veg all nice and soft and chicken falls apart.

I serve this with rice and the whole family love it.....and it's yummy whizzed up as soup for the following day.

Hope that's given you a couple of ideas.

I make chicken soup and it is apparently nice ( I don't eat it but the 15+ people who eat here regularly are always begging for it!)

Get a whole fresh chicken and chuck it in a big massive pan of water. Let it boil for a while and then simmer it until the chicken starts to fall away from the bones.

Strain the chicken out but keep water. Strip all meat off chicken and dispose of bones/skin/.bits you don't like the look of! Put this back into the water along with leeks, potatoes, cabbage, carrot, potatoe, courgette - basically any veg you like and can lay your hands on ( I put cauli and all kinds in mine!)

Allow this to cook slowly for an hour or so and voila! chicken and veg soup to die for - serve with either homemade bread balls with butter or a french stick sliced up :)

Soup is a food that is made by combining ingredients such as meat and vegetables with stock, juice, water or another liquid. Homemade soup allows the cook complete mastery over what goes into each recipe, and the methods and techniques used to create delicious and nutritious dishes.
