It goes off experience. I would start someone off at minimum wage and increase it per year to a set limit of £x over nmw regardless of their age. In my opinion a 40 something new person to the industry doesn't deserve to be paid more than a 16 year old new to the industry so they would both be paid the over 21's national min wage with the opportunity to reach £5 over nmw with me. Obviously higher ranking positions such as managers would be higher paid but I'm guessing you just eat someone to do the work not manage the shop too xoxo
