Self employed stylists...

I own a salon and rent chairs to 2 other stylists and a nail technician. I have a written contract stating the basic rules, holidays,rent etc which i ask them to sign. Does anyone else do this and how much holiday do you allow them without paying chair rent?
Also do you mind me asking how much rent they pay? Do you help them when they first start?
