21st birthday help!

its my 21st birthday coming up, my original plan was go to the ever popular Iceland. But it's looking like I left it to late to book.
Has anyone got any ideas where else to go?
I didn't want a relaxing holiday I want to go see something Iv never done before!

Yes Rome is lovely and full of culture and famous stuff.
Had a great holiday here between Christmas and new year. Go when it's cooler though, not hot months
