So with me if I'm using high lift I'd only ever use 12.1 because I wanna cancel out the warmth.

I'm still confused when I would use a 12 ash violet instead? Or even a 12 violet cendre?
 
Are you talking about Wella? If so the .1 tone is grey, so subdues warmth instead of counteracting it. If you just think of your colour ring you should have a better understanding of why you would use violet and cendre (I think cendre is blue based ash?)
 
Always neutralise what you're exposing.

Base 6 = orange, orange-yellow, yellow, pale yellow and very pale yellow.
So your formula would be 12/89
/8 = pearl (blue) to cancel out orange. /9 = cendre (soft violet ash) which will take out the pale yellow but i'd also add some special mix.

Base 8 = yellow, pale yellow and very pale yellow. Formula 12/61, /6 = violet to cancel yellows. If you wanted a different tone you could use 12/96 which is more pinky.
 
You use ash (blue ) to tone out brassy/ orange tones, you use a Violet to tone out any yellow, hope this helps.
