How to pick a great employee

Hi ladies, I'm a new employer looking for the right applicant/s to help me cover all the hours for my small business. The salon I'm in wants nails offered which I am running but I'm not really a nail specialist so how do I choose the right applicant for the job. They want shellac and normal manicures only as they think acrylics smell etc. what would you suggest is the right way to choose a decent applicant other than just a trial at interview as this is not my area of expertise?

Do you girls normally ask employees to do a trial run and if so do you pay them??

Any suggestions great fully received xx

Soz, but bit confused. Who is the employer? You state you are, then you say "they want shellac ...".

Just asking in order to offer the right advice ......... :)
