I've been doing hair for years.

But I'm never happy with how I cut around ears.
The 'sideburns' always look heavy.

I've tried several different ways to achieve it. Leaving them longer, taking the shorter, putting a uniform layer there, not doing that, texturising, not texturing. But I'm am a loss now.

Below are pictures of what I want I achieve.

Do you use scissors for that area? If so I suggest using a razor. I love my razor for removing bulk. I use a razor in almost every cut.
 
Why don't you try more over direction? More than you normally would.
 
Every one except frankies is layered at 90* frankies looks disconnected. The angle is different on them all too you'd need to copy the angle to get the look
