So let me get this right.

She first contacts you about the problem on 13th December with one week left to run on the voucher and then she waits more than a month before getting back in touch again today - what a tryer!

I wouldn't entertain, call me mean but I wouldn't even extend it as it hasn't exactly been a priority to her and that's not your fault.
 
Yes but I called her on the 15th to tell her basically what trading standards had said bit I was willing to offer her and extension or alternative but not a cash refund
I didn't actually get to tell her this I just left a message to please call me
Which she didn't
She says she didn't get the message
 
We are now nearly in February. Let her I don't think she will have a leg to stand on. I think you have been more than accomodating.

I agree, she doesn't have a leg to stand on and won't get very far, hope it just goes away and you don't hear from her again x
