I work in HR so I'm used to being one of the people asking the questions!
A couple of useful ones I like to use are
Tell me about something that didn't go according to plan (or a mistake they've made) and what they learnt from it - it's interesting watching how they react and answer the question, ideally I would want somebody to be honest and to show they have reflected and learnt from what happened.
