Who deletes old posts?

If I look on a page that only has a few posts i make assumptions.

Either they have only just started, or they don't really post much etc.

I disagree with this totally.

Well like I said it just my opinion.
I make sure my posts are up to date and current. So yes deleting irrelevant posts etc is necessary.
I don't know about your country but in mine false advertising is illegal.
You can have pictures of work your salon offers and clients comes in asks for that design or nails and you say oh she doesn't work here anymore. That Would be in my humble opinion false advertising.

Good luck and I am not wanting to get into a heated reply or debate with anyone about this topic I was nearly offering my opinion as you did ask.
