:lick: If you guys are anything like me and love to cook or better still EAT! You'll love this recipe. It's great with tea or coffe or even served warm as a dessert. Try it and let me know what you think.
250g (9oz) self raising flour
1 teaspoon baking powder
225g (8oz) caster sugar
2 eggs
1/2 teaspoon Almond extract ( really is half a spoon as is v. strong)
150g (5oz) melted butter
225g (8oz) cooking apples cut in to chunks
100g (4oz) ready to eat dried apricots cut in to small pieces ( have not tried it with apricots but I use raisons instead, works well)
25g (1oz) Flaked almonds to place on top
Lightly grease a cake tin and line the base with non-stick parchment.
Pre heat oven to gas mark 3 or 160c/325f.
Bung flour,sugar,eggs,almond extract and butter in to a mixing bowl and mix.
Add apples and apricots or raisons, gently mix.
Spoon in to the cake tin and gently level
Sprinkle with flaked almonds
Bake for 1-1 1/2 hrs or until the cake is golden, shrinks back from the sides and is firm to the touch.
Allow to cool in the tin for a few minutes andthen turn out.
